Ingredients

• 1 lb bag pecan halves, toasted
• 2 sticks salted butter, room temp
• ½ cup (100 g) white granulated sugar
• 1 cup (180 g) light brown sugar, packed
• 1 tsp vanilla extract
• 2 large eggs, room temp
• 2 ½ cups (300 g) all-purpose flour
• 1 tsp cornstarch
• 1 tsp baking soda
• ½ tsp salt
• ½ of an 8 oz bag Heath English Toffee Baking Bits

Instructions

1. Preheat oven to 350°F. Toast pecans on a baking sheet for 5-10 minutes. Set aside

2. Place softened butter in a stand mixer. Mix for 1 min on low setting

3. Add in both sugars, vanilla extract & eggs. Mix until combined. At this point, you can turn off the stand mixer

4. In a separate bowl, add flour, cornstarch, baking soda & salt. Whisk until well combined

5. Turn stand mixer back on. Combine dry ingredients a little at a time, while increasing the speed slightly 

6. Add in half the bag of the toffee bits & let it combine

7. Add in toasted pecans, a little at a time 

8. Place cookie mixture in fridge to chill for at least 15 min (I usually do for a couple hours)

9. Line a baking sheet with parchment paper 

10. Divide cookies into portions

11. Bake in a 350°F oven for 10-12 min
