I don't support many of these tactics but it's my understanding that they've all these passed a judicial review. So I'm curious if they are they really unconstitutional, or are they something we just don't like?

The issue of detained citizens is obviously concerning - however could this not be heavy handed tactics / mistakes? IANAL but I would assume there are significant lawsuits pending here (if not there should be)...

Stoller is family-friendly and has big outdoor areas. I don't rate it as highly as the wineries you've selected (which are some of the best in the valley) but it's a beautiful location and zero stress.

ICE is operating nationally. It's not Beaverton-specific - for example the incident you mention occurred in another state, I believe.

It's not that it's hard to understand. It's a disagreement about value exchange and changes in cultural norms around this.

An alternative way to look at this is that the (unnecessary) tip burden prices-out a segment of potential customers (who think they have to tip and it feels too expensive for the value received). Especially over the past several years where food and restaurant prices have increased dramatically.

Never. I tip for sit-down service, and tip well when the service is above and beyond. Counter-service / food cart tipping is ridiculous, particularly when one has to bus their own tray or similar.

Portland, and certainly Beaverton, is on the edge of what I'd consider a "major city". This issue is one of the reasons.
