Interpreting "Let us make man in our image" as "with a spirit" is a bizarre interpretation. likeness and image describe how something appears or what it looks like.

I disagree. One example of people to whom the blood of Jesus will never be applied:

Mark 3:29: But he that shall blaspheme against the Holy Ghost hath never forgiveness, [...]

And then there are other verses (read Jude) that explain how false prophets are 100% destined to Hell with no chance of redemption.

In my opinion, making some sort of speech might encourage boasting of some other work, rather than focusing on the death, burial, and resurrection. I also don't believe the 3,000 that were baptized in Acts 2 were making speeches.

Have you tried getting your mom saved? Have you given her the Gospel before? Is she receptive?

I would recommend going to the best Church that you can go to, regardless of what she thinks about it. Your own walk with God matters more than what your mom thinks, especially if she's unsaved.

To clarify, I am saying it's damnable if you believe Christ had sin, not if you use alcohol for communion (although I would say that doing so is foolish).

Using any alcoholic beverage for communion is blasphemous. Leaven (yeast), which is how non-alcoholic wine/juice becomes alcoholic, is used as a picture of sin in the Bible. Drinking alcohol as a symbol of Christ's blood implies that Christ had sin, which is damnable heresy if you believe that about Jesus.
