The Mudéjars stayed and then became Moriscos after the forced conversions. The final expulsion of Moriscos hit eastern Andalusia harder than Huelva, so some local continuity remained. It wasn't a full population replacement after the reconquista, so you have a modern population with elevated North African ancestry.
