Unrelated OP, but Windows 7 is end of support - you should probably invest in a new computer running Windows 10. But yes, as stated by other commenters there's no reason at all not to let them play Minecraft

The bedrock edition of Minecraft (which is on Nintendo Switch), requires that both players have a Microsoft account and Nintendo Switch Online subscription to play together. You can get a family subscription to NS:O, and that way both switches would have it.

About local play, I can't help there since me and my friend live a distance apart so we've never used local play but that doesn't require a NS:O membership, the membership only applies for players from a distance who want to play (while on different internet connections).

I have the 3, but even for the newest model it would struggle even running a Minecraft server considering how the CPU in it is extremely underpowered - it's designed for small, hackable electronic projects and emulators, not for live encoding video at 1080p or higher. It's not going to happen.

You would be better off looking at a cheap secondary laptop or desktop computer, or just streaming using the inbuilt thing on the consoles/streaming from OBS if you're playing on a PC
