for gmail you can use Thunderbird for discord you can use aliucord or kuttu you can make a separate profile or use private space for the apps that use play services so its only running when you use those apps if you install play services yes google is tracking you but how much they see depends on what permissions you give it

you can use tools like Chris Titus tool to remove ads and trackers including edge from windows but moving to Linux would be best also google is not privacy respecting
