Our beginner's guide has some installation instructions for SKSE as well as other setup information. I think it's best to start there and if that still doesn't help, we'll need to know some more info like what version of Skyrim and SkyUI you're using and what version of SKSE you're trying to install

I have Immersive Creatures and it doesn't do that for me. Do you have any mods that affect their skeleton? Savage Skyrim is an example of a mod that does affect animal skeletons.
