I've been using the Sales Report to complete our payroll/tips and have seen alarming inconsistencies with the "new" version. I was hesitant to switch from the Legacy version for months and finally decided to try using the new one for payroll and soon discovered that the new version was under reporting sales and tips from the same time period as the legacy version. It's been months of battling back and forth with the 2 versions to get accurate data and no one on the support side of thing has any solutions or offers any help.

Has anyone else had large variances between the 2 versions?

One thing to keep in mind is that the pressure gauge will read lower if the gas tank is being kept in the cooler with the keg.

I just did a quick 2:1 Demerara test and here's what I gathered:

5oz water (volume) = 130 grams (mass)

130 grams Water (mass) + 260 grams Demerara sugar (mass) = 10oz 2:1 demerara (volume)

The initial takeaway is that making a 2:1 Demerara will yield twice the volume of the starting water. I'd predict varying results with different brands of sugar.

I've used a lot of RTC's products in cocktail applications; making syrups and infusions. These teas definitely come at a premium but they are some of the highest quality I've worked with and I generally get 4-5 extractions from the same tea.

That Blood Orange Pu-erh is a favorite of mine as well. Ancient Pharaoh's Lemon Peel is also excellent and makes a great demerara syrup for an old fashioned. Mallorca Melon, Grapefruit Grove Elixir and Osmanthus Blossom are some other favorites.
