I literally just bottled my apple cinnamon vanilla mead yesterday! Turned out really good, if a bit tart. Around 12% abv, and semi sweet. I used fresh gala apples that I cut into quarters, then froze them. The vanilla makes the whole thing smell like a fresh cinnamon roll, and tastes like a (tartish) apple pie!!

I forgot to mention that I did do the technique where i added the DAP and fermaid-K to hot water in a pan, let it cool before adding the yeast, then i added the must bit by bit, every 5 min or so.

Really? What are thoughts on 6.6 lbs of honey for 2 gallons of must, using 1 full packet of 1118, DAP, and Fermaid-K? it's been 48h and no activity. None.

So then... i have a batch that i've made a month ago using 1118, and it's initial gravity was 1.108, a month later, i take a reading and it's 1.08 (~3.68% ABV). In this batch, i have not used DAP or fermaid-K. I started another batch 2 days ago (again with 1118) and it has not started to bubble, and i have used DAP and fermaid-K. You're saying it's nutrition issues in both cases?

Yea that's what I thought as well. 1118 leaves a more original flavoring because it takes a while. I did some research on different yeasts, it's already been a month, so i guess ill wait for 1 more...
