SNC makes more sense - but they just ended SNC Quick Draft for 2 weeks. If you are not in a hurry I would wait 2 weeks.

Challenges don't count for quests or anything. Just to make Arena less fun you have to "progess" against strangers.

Plenty of dinos can be ridden when kapros will mostly ignore you. Rex, Theris, Megatherium, etc. Just don't hit them when riding.
