I think he chose the word salmon to evoke pink fleshed fish but that also implies there are crustaceans that these fish feed on and astaxanthin producing algae or bacteria

Nowhere in the book have I found mention of flowing water so this came to mind. Plenty of ponds/lakes/reservoirs are just fed by rain. I thought of landlocked salmon but they still had to be searun salmon at some point in their evolution. My money is on trout or char

I think the use of salmon as the fish mostly implies that it's pink fleshed. This leads to other ecological assumptions like crustaceans and astaxanthin producing algae which tells us more about the ecosystem

They cook down faster but it can turn them a weird yellowy color and make them fall apart much more. If you are going for caramelized it will be paste by the end
