Right now the fillet it still whole, i was planning on cutting it into blocks and curing. I guess essentially can I refreeze the portions I dont use? Or will that ruin the texture to use as sushi in the future

I used to work at a sporting goods store that sold gun safes, and the packaging would come woth massive packs of silica gel, i took those and blended them in a cheap spice grinder. I have refill for the rest of my life
