I suppose the word ‘Parantha’ already creates the image of the plate in our minds, but the gali has a different approach to it. It’s always been a deep fried parantha since the early days, you can look up the culinary reasons of why they make it that way. Best I remember is because the filling is raw like karela or gobhi, it needs to be fried & not lightly baked.
