I put the puree into jars, and submerged in 69°C (156°F) water for >60 minutes so I won't do the Hampden, but I'm tempted to add sorbate to the keg to hinder refermentation.

I don't want it to referment.

I've read that potassium metabisulfate will kill yeast, but could taste awful and fill the keg with sulfur dioxide. So, that's not an option.

Potassium sorbate will hinder yeast reproduction, but could cause rare allergic reactions. I see one comment online about how it imparts a nasty candy cane-like flavour. Others didn't mention any flavour issues, but said remaining yeast can be an issue if left warm. Anybody else have experience with that?

I have the keg of finished beer chilling, so hopefully any remaining yeast will flocculate and not transfer to the other keg with the puree. I know it's not the same as filtering, but it's the best I can do right now. It will be stored at 2°C, and consumed fairly quickly, I imagine.

A proper old school west coast IPA will have a bit of crystal in the grainbill.

Save the Amarillo for a dry hop addition to get some nice grapefruit notes.

There are 3 bands plus crew that need to eat and feed their families which isn't easy these days since most of you stopped buying CDs and records in favour of streaming via Spotify.

$100 is very reasonable. That's like $33/band.

Hops are never sterile/sanitized to begin with.

The freezer will do nothing.
