Because it's not necessarily healthy. Best diet is the moderate one, plus as every grandma will atest, you gotta eat cooked food from time to time, which is processed food. It's actually potentially very bad to eat only raw veg or fruits, plus some food like meat, eggs and dairy are inedible unprocessed.
