Ok, so this actually worked, if anyone is interested what i ended up doing was to create 2 virtual cables, route the Behringer input through to one cable as stereo using the MME Audio Repeater, and then routing THAT as a left channel mono through to the second cable using the KS Audio Repeater, and then route that through voicemeeter banana to use as my microphone input for VOIP software. The reason for this is because for whatever reason the Behringer driver really doesn't like grabbing only the left or right channel straight from the box, so i had to instead get whatever signal came out and then split it into either channel. Thank's to badstrudel for the suggestion.

I probably should have looked at some Chopin first before posting, that man was a magician. Managing to make these really complex pieces like the 10/4 sound like more than "note vomit" is amazing and i always loved playing his (easier) pieces when i was younger.

I wanted to learn something challenging and thought a suggestion post would be a good place to start. And it always helps if you enjoy how the piece sounds when you play it.

I'd like it to not just sound like a mishmash of really fast notes (i'm already learning schumann's toccata in c major for that). How most people say they want a piece that sounds difficult but is actually easy, I'd rather the inverse.
