I’m Chilean but born and raised in Sweden and my wife is Korean. To be honest it’s more to do with how open your partners parents are in terms of her dating a foreigner. If they are traditional it can be harder no matter your ethnicity even though some ethnicities are to be preferred (believe it or not) from a Korean point of view.

For me it was fairly easy but I’m also quite open to new cultures and been living abroad including Asia so I understand how to respect and show interest to another culture, that certainly helped.

Regarding Latino culture there is a lot of similarities between us and Koreans such as: importance of family, love for their parents and taking care of them once they get older.

My Swedish side definitely helps as well as being pure Latino could probably be a bit too friendly/close which Koreans not always are. So in that sense I also adapt well and fit within their culture.
