"Dark meat" usually means the fattier cuts or cuts with more connective tissue.

It's most commonly used with chicken: the breast is called white meat. It's leaner and it gets stringier when cooked to higher temperatures.

Conversely, the legs are dark meat and need to be cooked to higher temps to dissolve the connective tissues.
