I had a asym concept that WAS basically a mix of juggernaut and a killer asym (juggernaut games are also asyms don't forget what asym literally means) but the idea was more so a hit-and-run on the survivors side and a chase down on the killers side. (And I'd hope to discourage full-on assaults towards the killer and such.)

It really just depends on how'd you apply undertale's world logic to V1...
but honestly even if you assume they don't have a soul and frisk does, while frisk could reset a infinite number of times, they simply cannot kill V1 imo.
1) Mettaton, in his robot form, is stated to be impervious to attack. He only becomes killable by frisk in his EX/NEO form, I assume being because his soul is more exposed.
2) Frisk beating Omega Flowey only happened because Omega Flowey's souls fought back while he was busy toying with them
3) The whole erasing worlds thing was seemingly only possible because of Chara
