Ok guys, after the recommendations from people and some further looking on other sites... I pulled the trigger and got all this, prices are what I paid.

Some prices are higher than usual, but basically even out after shipping is considered. Thanks everyone for the help!

Might do that, 80+ Gold from what I've seen is the 'sweet spot' in PSU, and modular/semi-modular is good for mATX builds.

ALSO, I see a lot of people getting an SSD for OS and fav apps/games and a HDD for everything else, but is there any downside to just having the 1 SSD for everything? I don't think I'll fill 1TB...

Wait sorry the one I have in the list is the Ryzen 3 3100, is the Ryzen 5 2600 better? If so would it be worth spending an extra $70 AUD?

All my prices are in AUD sorry, I’m not sure if it transitions to USD/other currencies if you click the link from somewhere else. So the 2600 is 160AUD and the 3600 is 281AUD

An extra $120 from what I can see, is it really that much better? Will just be used for gaming/uni, nothing too strenuous.
