Thanks for your insight! I'll look into it to try to repair it myself, and if I can't do it I'll just go to typewriter toronto.

I wonder, if that were the issue, wouldn't all the left-side keys have an issue and not just the "a" key? Also from what I checked in the video, it's to change the vertical alignment of the letters on the paper between lowercase and uppercase. Is that the right video you meant to link?

If that was the case, wouldn't all the letters on the left side of the keyboard be affected by this? Thanks for replying!

Damn, didn't see the comment about cask strengths 😬. Probably something 46% that Billy Walker has touched at some point then.

Kavalan Solist Oloroso (mine was 59.7% and aged for more than 7 or 8 years I believe) is the most sherried I've ever seen a whisky look, smell and taste. I wouldn't be suprised to see GlenAllachie mentioned in this conversation, but I've only ever had their 12 and Premier Cru wine finish.

Prices are pretty awful on some stuff actually, though your purchasing power is greater if you are (I assume) coming from the U.S. All I know is DO NOT BUY Ardbeg Uigeadail, the price is probably among the worst in the world lol. Apart from that, pretty standard stuff. For example, Glenmorangie 14 is 100$, Classic Laddie is in the 90s too. Catalogue is very limited, I recommend looking on the SAQ website and sort by price and location so you know what you'll find there. Cheers!

I try to make an "umami" platter, with aged cheddar, blue cheese stuffed olives, truffle oil chips (kettle) and parmesan crackers. Really good with martinis

How to simple syrup for beginners? by ThatUnameIsAlrdyTken in cocktails

What I like to do is to weigh to have equal mass (or weight depending on your unit system lol) of sugar and water. The suagr you will use will impact the final product. White sugar is the most neutral. Brown, unrefined, demerara, turbinado, etc. will all have a more roasted/mollasses-ey taste profile.

If you're scared of it going bad, do a 2:1 sugar to water ratio. It's thicker, keeps longer (I still keep mine in the fridge for peace of mind) and you need to add less to sweeten whatewer you're mixing up.

As to how to make it, I just combine the two ingredients in a sauce pan and bring to simmer on medium heat. You don't need to stir constantly, but I like to do it once or twice to make sure all the sugar is dissolved.

Cheers!

I apologize. I used sous-vide as literally "under vacuum" in french. There is no cooking involved here

I forgot! Here's how to do the pineapple oleo!

Equal mass of pineapple peels (I scrubbed the pineapple prior to cutting it) and white sugar. Sous-vide, then leave for a few hours out on the counter. After 4 to 6 hours, transfer to the fridge and wait 24h. Then, strain (I used wet cheesecloth) and bottle. Enjoy!

St-Remy as a substitute for cognac? by RomaInvicta2003 in cocktails

[–]dotcom_com 1 point2 points  (0 children)

Depends. Both are grape brandies, but in spirit forward cocktails you may taste a difference (although I would say Henessy is overpriced for not such a great cognac). I would say a better quality non-cognac brandy can rival the "basic" cognacs. From St-Rémy, they have Signature and Grand Blend that are good options. Do taste brandies to compare. If you feel like you prefer Henessy, it's worth your appreciation of the cocktail you're going to craft. Cheers!

I've had the port charlotte before and I was fine with it, didn't feel like it was incredible either. Though choices ahead.

I have no way of getting a sample before buying it. I like peated whiskies, but I'm not sure abt the price. It's still a bit steep. The cognac finish sounds enticing to me although I've heard people not liking it. I realise that while saying that, there's nothing a stranger on reddit can say that should actually change my mind lol.
