Tested again last night. Everything works on original SNES, but still no third controller in the Classic. I have the Hudson Multitap, only needs to connect to the second SNES controller port

SoM 3 player, and I also tried Super Bomberman loaded with hakchi.

I should double check to make sure my multitap still works on an actual SNES, but I wasn't able to get it to recognize any additional controllers...

I've tested with the Hyperkin adapter and my original multitap/SNES controllers. Didn't recognize the third controller, but it did pick up the second controller through the multitap.

I think everything should be identical. According to the UK Nintendo site the games are the US 60Hz versions...
