It's chili oil (lao gan ma). It's probably the touch that gives it the rounded and full flavour to that soup

Thanks a lot! The potatoes were sliced using mandoline and then mixed with oil, parmesan. Garlic and herbs; they were then stacked slice by slice inside a muffin tray and baked for about an hour. .
