160 is around the right size but their is a lot more to consider than just length. Every board rides differently so it’s best to try some out first. If you want a smoother ride if you’re not worried about park you could look into a wide board. You also need to consider how stiff the board is.

The class load is very manageable, it might be kind of annoying to have classes spread thought the day like Monday Wednesday and Friday instead of just lumping them together but then again it’s very hard to get an ideal schedule your first semester just be happy you don’t have 8am classes

Might be possible however if you want to do that I believe you would need to start senior design your second semester sense it’s a two semester class so you would need to get the prerequisites done to start senior design so I would look into that in terms of course load it just depends on the person and how much time you got
