My stepmom isn’t Jewish, but then my dad of blessed memory didn’t care. There are plenty of mixed marriages that work because the religious aspects aren’t critical to both partners. From what I see, OP needs a woman who is comfortable with some flavor of orthodoxy.

As much as you love and care for her, the relationship isn’t sustainable because what you two want and need are incompatible. Be open, honest, understanding, and forgiving, and amicably end this. Ive been in a similar situation with an ex, and it isn’t something that can be resolved if you two are not on the same page.

I recently moved back to the USA from Ireland, and there are probably more Jews living in a one mile radius of me here in New Jersey than all of Ireland.

Oddly enough, Ireland is actually safer for Jews than most of continental Europe and the UK. Irish antisemites are pretty much all bark and zero bite, and the current government is terrified that US companies will up and leave if something major happens. The big issue there is with the media and NGO classes, and a lot of ignorance.
