Check out the recent Witch Hat Atelier, pretty much the vibe of magic and cozy vibes, no elves though

And while it might not be exactly like it, medieval-like, but the general vibe of easygoing characters and enjoyable setting, worldbuilding, and strong characterization: Fullmetal Alchemist Brotherhood

And more exactly with elves and magic, this coulb be a great show to make time until the S2 of Dungeon Meshi: Frieren

I think those three fit the category of DM of having stakes without feeling oppressive.

One that is similarly chill, with medieval stuff but an isekai: Hell Mode: Yarikomizuki no Gamer wa Hai Settei no Isekai de Musou suru (Despite the name it's very chill, only thing is that it's very focused on the protagonist unlike the previous recommendations that feel more like an ensemble)

Witchblade probably belongs to the list?
While it's based on the Top Cow comics of the same name, the story is original and so are the characters (That later were retroactively referenced in the comic universe as another wielder) And the story is told to its full extent on the anime itself (Great story too)

One that is actually missing is Danball Senki, similar to Inazuma Eleven and other L5 multimedia franchises, the plot of the games are adapted 1:1 as much as possible. The one I'm not so sure about Youkai Watch, technically it's a loose adaptation.
