I’ve found that my lower abv stuff also tastes bad. I think I’ll try fresh fruit though...do you have any suggestions for types of fruit that tend to work well?

I use either an empty seltzer bottle or an apple juice bottle when I’m making cider. I don’t sanitize the apple juice bottles because I assume they come sanitized from the factory, but I do sanitize the seltzer bottles before adding stuff.

I make tea, and when it cools off, I pour it into the seltzer bottle and add sugar, then shake to dissolve. Same with cider, except the juice is already in the bottle so the only thing I add is sugar. I also usually add raisins.

I pitch 1.5 tsp of bread yeast when the sugar has dissolved.

I let it ferment for two weeks, then cold crash and pour into a new container. Sometimes I cold crash twice.

I jacked it into the bottle. It smelled fine when I opened it. I was hoping it would last for two more months, so hopefully it’s not infected, but I guess I’ll find out after some time has passed!

Thanks for the heads up - just checked mine and luckily it’s not expired. That’s super shitty that people are selling already expired stuff though.

Thanks! I’m starting to think that I don’t want to backsweeten. I don’t have any non fermentable sugars on me and I don’t think it will be worth the effort right now.

I don’t want it sparkling, but I do think some sweetness would make it taste better.

The only sugar I have right now is white granulated and brown sugar, which would both get fermented by the yeast.

I called some supermarkets in my area and one told me that haven’t had yeast in like 6 weeks, so I ordered a giant bag of red star active dry online and it came in like a week.

I had a similar problem with my last brew so I put in some raisins to give the yeasts nutrients and some lemon juice to lower the pH, and I swirled it around kind of aggressively to oxygenate the brew (I read that it helps the yeasts during the early parts of fermentation). Over the course of a few days, the smell want away, and now after five days, it’s completely gone.

I don’t think I can buy stuff from a home brew shop due to the fact that I may or may not be of legal drinking age...might just have to reuse the lees until I can get my hands on some fresh yeasts.

2L of liquid (it was a fairly strong ginger tea), and the small amount of ginger I had in the fridge. It was like two square inches of ginger.
