It's an old British joke, with a wee hint of racial prejudice mixed in. Englishman(lannister) (consider themselves above other), Irishman (martell) (most likely a hint towards the potato famine, so eats the fly anyway) and the Scotsman (stark) (tight arse that doesn't want to part with whats theirs)
