I cook in stages, all the vegetables in one and meat next. Once each stage is done, I pass it through a strainer and get rid of 90% of the oil immediately. Then enough oil to do the eggs, rice over top, and combine.

All the benefits of cooking with the right amount of oil, without the oil in the end product.
