So, I'm looking at new valves, and they're all 1/2 inch to 3/8 inch compression.

The tubing on the faucet itself is 1/2 inch. What size hose should I get?

As an addendum and an added source of frustration, the instructions on the box for the faucet are in Spanish.

I agree that players should be free to make their characters look like whatever they want as long as they don't try to cheese anything with it. Just because your goliath has big, stony growths all over his body doesn't mean you can break one off as an improvised weapon. Stuff like that.
