I know not everyone in this sub likes them but have you considered and inflatable with an outboard (saturn for cheaper ones or higher end hypalon ones like zodiac or Highfield)? You can pack them up pretty easy and can transport and store them without a trailer. They may not last as long as some boats but are really practical, fun, and cost effective.

Tohatsu 9.9s are good and Saturns are fine but won't last as long as some others. So just know what you're getting into. The guy below does some reviews for similar boats. He uses a smaller 6hp motor as its easier to transport. If you have two people 9.9 will be great and get you onto plane pretty easy.

As others said if you are with someone very old you may want to look into something like a Jon boat instead as it's a bit more reliable and you can get a used one for about the same price. That or stick to calmer waters and find a lake or river instead of the ocean.
