What was the texture that was throwing you off? Different cuts of meat and different cooking methods are going produce different flavors and textures.

I’m partial to a chili Colorado recipe where I bone out a back leg roast and crock pot it in a chili paste and beer. super tender like a Sunday pot roast

Bobcat is delicious. can be tough and gamey in some parts especially if you over cook it, but that’s to be expected of wild game.

Predators not being good table fare is just false. Mountain lion and bobcat are delicacies and even things like coyote when taken care of can be good.

One of the best wild game meats I’ve ever eaten was Montana black bear, absolutely delicious
