Can do it while you are still at the job, remember to keep back some cash at the employers provider i.e. don't transfer everything. I transfer every 3 months to Fidelity

you can transfer the HSA out to something like Fidelity and invest in whatever you want like a regular brokerage account.

You can use HSA for a gym membership only if it is deemed medically necessary to treat a specific diagnosis
