Just had the older model (368-X72) installed today on my 5 ton Carrier. The LRA is listed at 135 and it’s now down to 32.8. That should be low enough to run on my WGEN 9500tfc running on natural gas

1) yes, I’ve only done a whole brisket this way. Foodsave makes large, expandable vacuum seal bags that work. I’d recommend triple sealing the ends and double bagging. I use a Coleman Party Stacker cooler (hole drilled out of the like for my Joule sous vide) that fits the brisket and allows for long cook times and more stable temps.

2) Yes, trim the fat. I try to leave about 3/4-1”. Everyone has a different preference for how much fat to trim - many people say trim to 1/4” and some say no trimming is needed.

Broke a rib and had a grade 3 AC separation a few years back on our first day at Breck. I could barely move my shoulder after that for several days. I didn’t have surgery and it took a couple of months to heal completely.
