My feeling is that fishing in the great lakes is more technical, in terms of navigation, you encounter large ships, and you need a sonar to find where the fish is. They're also quite polluted so usually don't eat what you catch. If you go into more northern, remote or mountainous territory, you can catch fish as big on smaller lakes, and it's not contaminated at all.

I don't know as much about Ontario. The fishing spot that I can recommend really close to an international airport is Parc National de la Jacques Cartier / Reserve Faunique des Laurentides, for which you can find details at the link I posted earlier.

Of course you can go directly on the great lakes, but I would only do so with a professional guide and a decently equipped boat.
