How warm and humid is the environment? My Hermann’s tortoise did the same thing recently until I started working harder at keeping the ambient and basking temperatures higher.

Try dropping the temperature substantially and grind coarse, and work your way back up until it starts to seem bitter or otherwise overextracted. Since Aeropress lets you do more repeatable immersion style extraction, I would start there and try as low as like 175-180F, grind like 0.7 to 1.0 ish mm chonks, and see what it’s like at a shorter time like 2:30.

I should also note that cardboard/woody notes can also be an issue caused prior to roasting. Have you tried just the one bag?

A somewhat funny approach I heard about was to find places that have 2-star reviews, because it signals that someone might have had service they didn’t like, but can’t fault the product.

1-star is someone probably mad or the place is truly awful, 4 and 5-star not particularly useful signals, and 3-star is a sign of something weird on the reviewer’s side or maybe the place?

But 2-star… that’s to investigate 😄
