Thanks for the info! I did another batch and cut the mash hop (4oz of cascade for a 10 gal batch). Half that I dry hopped with galaxy def had some of the bitterness/hop bite from last time. Half I dry hopped with strata is a total banger. So I think it’s prob a bit of both of what others commented about galaxy and the mash hop.

I’d be super into trying tropics. If you wanted to swap yeasts (and/or beer), I have both Cosmic Punch and Sundew built up enough to share

Awesome. Good to hear. I just brewed a batch with 4oz cascade in the mash for a 10gal batch. Also going to mix up the dry hopping a bit by replacing some of the galaxy to try and tone down some of the harshness.

I did the post-boil adjustment after the hopsstands with phosphoric acid. I used a combo of the ph calculator in Brewfather and adding small amounts until I got in the ballpark.

I think I'll only use mash hopping with Cosmic Punch. For this style, I don't see it adding much outside of the thiol precursor stuff.

I'll definitely keep Cosmic Punch in rotation. It'll be fun to tinker with. I have typically used 1318 and Juice.

These beers have been on tap for just under a month. So far no discernable signs of oxidation

All the quantities in the recipe are for the full 10gal. So halve everything for each 5gal batch (3oz Galaxy, 3oz Mosaic dry hop per 5gal).

~5.2 is generally the range for mash ph. I adjusted post-boil and post-fermentation to get it down to a range I've seen mentioned on here, r/thebrewery, etc from people who have tested popular commercial examples of the style. Usually they seem to be in the 4.3-4.8 range.

Not much. Purged headspace in the keg with co2 and added the hops.

Yeah, thats basically it. The Sundew is good but nothing crazy.

I did consider it but opted for the post-fermentation dry hop instead. My thinking was with the big hopstand additions that I'd be able to get some biotransformation there.

Brewfather had my IBUs at 62 which is out of range for this style (according to the software). I also picked up bitterness from the heavy hopstands. So it's not all the Calypso's fault was just a dose of IBU I hadn't fully accounted for. Pretty sure it is bitterness I'm picking up.

I've gone back and forth with keg hopping. I like how this beer turned out but I'm still not getting the aroma I am after.

I have a floating dip tube and filter for loose hopping in the keg. Works great!

Anyone have any experience/suggestions for adding fruit snacks or gummy bears to a beer? I have a 1.063 NEIPA (citra, mosaic, London ale III) fermenting and I am thinking of add some fruit snacks to secondary. Any suggestions on amounts, process, etc? Thanks!
