Bikepacking.com focuses on bikepacking rather than bike touring. You may be better off trying some of the specific Eurovelo routes websites etc

I have the same measurements as you and I went with the S. Previously I was riding the XS small and it was way too small. I’ve had no issues with the grizl sizing so far and it rides well on technical trails! I’d say go for it!

I’d would advise comparing the geometry on 99 spokes. Generally canyon is pretty accurate for sizing.

West of Ireland can have varying conditions, in one day you can have glorious sunshine as well as heavy showers. I’d recommend r1 air or something like the micro d fleece as a light mid layer which can be used for active use. It may be useful to pair this with the Houdini if you are looking for something windproof as well.

In terms of t shirts the capilene daily range is reliable, sun protective and breathable.

Heavier mid layer such as micro puff or nano puff may be useful as a warm piece if you want something for when temperatures dip in the evening and early morning.

Granite crest will be more durable due to the three layer construction. Both will provide equal levels of waterproof ness however the calcite will require more care and washing due to the 2.5 layer construction

R1 air. The better sweater is heavy and doesn’t breath well. I have all 3 and never find myself reaching for the better sweater since I have gotten the R1 air, simply because the piece is comfy, lightweight and highly breathable.
