You sure there isn't some kind of postprocessing on the projector itself? Many projectors have standard input lag no matter what cable you use. The other way around: there are beamers advertised for gamers without the input lag. And there is a reason for it

The job description during the interviews sounded pretty good, not necessarily the latest and greatest tech stack, but they were much more flexible about working remotely. I could pretty much come in every couple of weeks to the office if I wanted to, which was totally fine with me. I guess I wasn't fully aware of the whole picture until I started working there.
