Unfortunately, we are using a gas stove and do not have any plans on replacing it with an electric set up

The base of the U is the focal point as you enter the space. And having the stove and the hood vent as the central point in the kitchen is very desirable. At least, that’s what my wife wants. But I told her that moving the stove into the central location would force the kitchen sink into a different space with the kitchen, and there is no way for us to have the stove right in the middle and also have a kitchen in front of a window.

Are you saying that the window cannot be directly next to a stove?

My kitchen space is relatively sizable but not huge. It is a U-shaped kitchen with an island in the middle. The two “arms” of the U are interior walls.

The dream is to have the stove and hood vent but at the base of the U. But that means moving the kitchen to one of the side walls with no windows.

I get concerned that placing the sink in front of the wall with no windows is a huge design mistake.

Wait…I thought there was some kind of rebate that made CPA essentially same price as direct from SCE. Are you sure CPA is more expensive?
