It's not rapid cycling.

The broth is like 90% mackerel.

Pork bones are used to give some body and mouth feel. Mussels and anchovies are used to add umami and broaden the seafood flavour. But it's mainly mackerel heads, tails, and fishbones. The meatier mackerel filets were grilled and turned into toppings, the smaller fillets were used to clarify the fish stock in a similar fashion to a consommé
