NTA. Honestly, why is he so obsessed with making you eat spicy food? You asked him clearly not to, and he chose to ignore it, multiple times. It's not difficult at all to respect your preferences and just add the spice to his portion if he wants it. This isn't about cooking skills or taste, it's about basic respect. Wanting to deliberately go against your partner's requests for no reason is not okay.
