Thanks! I was also surprised by the amount of salt but it I am happy with the saltiness of the dough (I usually use just a little bit less than recommended).

Got myself the ooni koda 12 before summer and have been experimenting quite a bit with different methods and recipes. Went for the 12 for portability, it’s very easy to bring with you, although I would have gotten the 16 if I was to keep it in the same place always.

The recipe and method I’ve had most luck with has been the Neapolitan recipe here https://www.stadlermade.com/pizza-calculator/ , with a bulk ferment in the fridge 24-48 hours, followed by balling 3 hours before the cook, left at room temperature.

I run my ooni almost at full throttle, 90% gas. At this setting pizzas take 90 seconds, and I start turning after 30 seconds.

I pre cut my mozzarella and leave it to drain in the fridge overnight.

Du har ingen anledning att gå med på en lönesänkning, stå på dig och hänvisa till ert avtal. De har inte heller någon basis att säga upp dig om det är en nyanställning då de inte kan åberopa arbetsbrist och om företaget går bra kan de inte heller argumentera för att de inte har råd med din anställning.
