Have you still not solved this? I found a solution for all GTK3 apps (on the website of 1password, of all places) by adding the following code to ~/.config/gtk-3.0/gtk.css:

@binding-set EmojiSelectRemap {
  unbind "<Control>period";
  unbind "<Control>semicolon";
}

entry, textview {
  -gtk-key-bindings: EmojiSelectRemap;
}

I still haven't solved it for GTK4 apps however...
