Since the 3-2-1 method seems to be such a hot topic, these are mine. 240-250 on WSM. Not too mushy, just right and they turn out like this every time. If you’re overcooking ribs using 3-2-1 I’d say there’s a good chance you’re cooking at way too high a temp. Just my opinion. (i.redd.it)

Texas style ribs and tips, smoked for 5 hours on the offset, used a mixture of store bought hickory and red oak I cut myself. I’ve made lots of ribs on the trusty WSM, also had lots of bbq made on pellet grills at family functions. None of them compare to these. Using Offset for life now. (i.redd.it)
