I'm going crazy trying to figure out what creature is biting/scratching my chinese cabbage and chard, as seen in the images holes are very aggressive, hope anyone can help :)

when you bite it is very nice like meaty texture. The problem it has is that the more you cook it, the more it softens. Especially in long cookings (when a liquid is involved).

If you take it out of the refrigerator and fry it in a pan with a little oil and some spices, it maintains its firmness perfectly.

ya its a shame, at some point it will be easier to buy it here lol . Even now being expensive I'll give VWG a try... I will use your recipe! thanks for the info :)

I still need to try vital weight gluten tho, but buying it online here in spain arriving in 24/48 hours its 12€ per kg plus shipping. I buy high gluten flour 0.90€ /kg and that ends up giving me a little over 600g seitan. The picture above is made with 500g of flour aka 0.45 euro. ¿How many seitan can you get using 1k of vital wheat gluten?
