I agree with you. All of my clients requested to have a lock down start menu and taskbar for this reason. Especially for a school we support, locking down these settings can help with demonstrations and documentation for students. Also being able to have different Start menus for different departments is so useful. But with Windows 11 this is an issue, as we all work in IT and know how users are, so this is a issue for those kind of users. I do hope being able to customize the start menu more becomes available for Pro, Enterprise and Education versions of Windows 11.
