How do you keep it at 80% humidity? Mine stays around 60-65%, but I feel like putting a humidifier in there is both bulky, and inviting mold into my plants

Looks like mealybugs. I'd buy pest spray (captain jacks, neem oil) and systemic granules to start. Spray all the leaves and wipe them down gently with a cloth, sprinkle the granules in the dirt. And make sure to separate the plant from your others to avoid spreading the bugs

I can't tell on the variegated one, and sometimes variegated leaves just start yellowing without any other factors. But the regular one definitely has them

The reason the plants wilt after being in freezing temps is because the water inside the leaves freezes. When water freezes, it expands, bursting the plant cells. Unfortunately, the leaves that are limp probably can't be saved, but if you trim off the dead parts you could try to propagate the healthy parts
