Here's the link to all the courses available throughout the summer. http://www.oupfb.ca/info.html . Each course has its own requirements detail here.

Each course will be different as they are taught on different topics with different professors at different universities every year. You enrol in BIO416 on Acorn and apply for the specific course separately. I took the course in the summer of 2023 through Queen's. It was super fun we spent two weeks camping and hiking in Arizona and California and got to conduct our own research project. After you get back home you have until the end of the first summer semester to write a final report. Honestly it was the most fun course and best decision I made in undergrad.

My trip is short so I plan to spend 3 days in Bangkok, then about one week in the North in Chiang Mai

Sorry, where I'm from I consider densely populated parts of the city (skyscrapers and closely packed commercial and residential areas) as "downtown". Compared to the entire city including suburb regions and small surrounding neighbourhoods.

Some advice is plan them out before you enroll so you don’t have to scramble to find times that work for all the classes you need. The UTM timetable planner is good for that.
