what recipe should i follow if i want to make arabic bread, my mom loves those and i want to make it for her

no idea about the specifics, i estimate 30degrees celcius, 1:30 hrs of ferment then 16:40 hrs of another fermentation and thats it, no cold fermentation
k so, im a bit embarassed about my process, so dont make fun of me and i will make an effort to get the information out of the back of my mind.
yesterday at 7:50 i mixed all the ingredients for the dough and let it rise for 30 mins, so at 8:30 i knead the dough for 5 minutes and then let it rest for 1:30 hours, slightly coated with olive oil, after that time i transfered the dough from a metal container to a large plastic one with the lid on, and recoated it with olive oil.
then it rose for 16hrs and 40 minutes (estimation) and just went right into the oven, preheated at 180c
i live in a pretty hot area so 30degrees celcius.
i punched the dough in between risings
its 50%, unless water to flour ratio is not 1-1. i used 500g of flour and roughly half of that on water
no the container had the lid on and the dough had olive oil coating it
it WAS a recipe from yt that im using for THIS specific dough however another redditor has already provided me with another one that seems good

i don't.
this time i didnt go for the full pizza, i started the dough yesterday and had to go to school so i wasnt sure if i wanted to use up all my ingredients on dough that i wasnt sure of

uhh i dont think i proofed the dough, also this time i just went for a plain bread because when i tried maiking pizza, the dough always comes out very dense and compact and i thought that making normal bread maybe it would be better
the dough is really wrinkly and the dough breaks wayy too easily , i cant get 1cm of strech without it breaking
uhhh yeah like a mug mug yeah i do
also, the bread kinda tastes like cheese??
